If you love a good breakfast, but early riser is not your thing at all, here is a way to start your engines with relative ease. A green smoothie to start the day, courtesy of Kathryn Taylor, creator of the blog Cookie and Kate.
The concept is simple: place most of the ingredients in a wide-mouth jar or in a small refrigerator bag. Seal it and put it in the freezer, where it can last up to six months. When you want to have breakfast, let the mixture sit at room temperature for five minutes, then pour it into the blender, add the remaining ingredients and you will have a green smoothie to start the day.
GREEN SMOOTHIE FOR BREAKFAST
1 cup of spinach (washed and disinfected)
1 medium banana, cut into 1-inch pieces
1 tablespoon flaxseed
1 tablespoon of almond or peanut butter
1/4 teaspoon of cinnamon
Add when making it:
3/4 cup vanilla flavor almond milk
Combine all the ingredients in a blender. Mix until completely liquefied, using the blender’s shake feature, if you have one, or starting at a low speed and increasing to high as soon as you get traction. Enjoy it.
